1. As I waited in InstaCare for 4 hours the other night (they told me the wait would be 1.5 hours, HA!), I seriously thought my eardrum was going to rupture, again, and that my throat was on fire. All I needed was to see a doctor, any doctor, to get a simple strep test, confirm my misery of an ear infection, and order some antibiotics. As I was feeling sorry for myself, I looked around and nearly the whole waiting room was full of young mothers with restless, coughing little babies. Suddenly I didn't feel so sorry for myself anymore.
2. Creme Brulee is my new favorite dessert. My mother-in-law let me borrow a book about several different brulee recipies, and I must say, it is delicious! I guess I really haven't had it a lot before, but wow is it yummy.
Recipe:
Heat oven to 300 deg. F.
1 c cream - heat on stove top, just before it starts to boil
In a separate bowl,
Cream 1/3 c sugar
2 egg yolks
2 tsp vanilla
Nutmeg and Cinnamon
Then pour the cream slowly while stirring into the creamed mixture. Do not whip, just gently stir (this will reduce bubbles on top of the brulee once you cook it). Put mixture into the ramekins and bake in a water bath for 35 minutes. It should still jiggle slightly in the middle once it's done. When it's cooled a bit, chill it in the fridge. If you like the sugar on top, torch it up! I prefer it without:) So simple. Sooo Good.
*I bought the ramekins for about $1 at TaiPan-gotta love that store!
3. Don't you just love hearing from old friends? I talked to an old friend the other day whom I hadn't talked to for over a year. I am so bad at keeping in touch, which is one reason why I started this blog. Anyway, it totally made my day, Thanks Tex!

Hey Lins, I am a brulee lover as well, can't beat the stuff! Also, I forgot to tell you, I went to Tai Pan in St. George thinking I was just going to look around . . . I spent $80 dollars on (tons) of Christmas decorations. Ha Ha. who knows how I'll get it back here, oh well, it was so cheap I couldn't pass it up. Thanks for the referal. And sorry to hear about your ear infection, kid or not, those are horrible.
Aw, hope you're feeling better. Earaches are the WORST. I thought people outgrew those, but I still get them too. Isn't TaiPan the greatest!!! Let's go visit Grandpa this spring, we'll chat later...
I love your blog! Your story made me so sad. First because of your earache (so sorry!) and second because the kids at the doctor hit too close to home. Ha! I have just gotten to the point where I don't take Ty to the doc with me and I only take him if absolutely necessary. It does get hard not to take him when I have to go every week now! Tai pan does rule! Except only in SLC. :(
HAPPY BIRTHDAY LINDS!!!
wow, Really you like that stuff? We had it everynight on the cruise ship in alaska and now I have nightmares about it... jk not that bad, but good for you that you found your self a yummy desert... never hurts our quality of life does it?
Insta Care has got to be one of the most useless places. I'm glad something useful came out of your visit. I always just seem to get sicker. Tell Brooke hi and Congrats from me.
