Tried and True

I absolutely LOVE Cafe Rio! And I mean LOVE it! Matt had a stop in Salt Lake City last week and came home with this beauty in hand- my Valentine's Day present.
A pork burrito:) After digging in we decided that it tastes much better at the restaurant (go figure) but it was the thought that counts. Love you honey-- thanks for thinking of me and the hungry boys!!

Fortunately, friends of mine supplied me with thier own versions of the coveted Cafe Rio Pork Salad recipie. After intertwining many of the recipies, I think I've found a winner. We've made it a couple of times now and also for my family at Christmas. I got the affirmative "Yeah, good." from my brothers, mind you, after they went back for thirds, so I'm sticking with it.

Cafe Rio Pork Salad
Pork:
3-4 lbs pork roast
Cook roast in a crock pot filled half way up with water. Add orgeagno, salt, cumin, and cloves. Add a cut up onion. Cook for about 4 hours, then drain and shred the pork.
Add
1 can (14 oz) red enchilada sauce
1 can coke or Dr. Pepper-anything really just not diet
1 1/2 c. brown sugar
Cook in crock pot for another hour.

Black Beans:
1-2 cans black beans
minced onion
garlic
1 tsp cumin
1 c. tomato juice *dont' skip this one!
1 can green chilies
salt
cilantro
Fry onion in some olive oil with garlic and cumin. Add beans, tomato juice, green chilies, and salt. Heat through until beans soften. Add in cilantro at the end.

Cilantro-Lime Rice:
2 c. uncooked rice
1 tsp butter
garlic
3 tsp lime juice
4 chicken bouillion cubes
4 cups water
Combine ingredients and cook rice like you normally would, until it's tender. Remove from heat and add more lime juice, sugar, and cilantro to taste. Fluff it in until it's the consistency you like.

Creamy House Ranch Dressing:
1 dry Hidden Vally Ranch Dressing package
1 c. sour cream/mayo
1 c. buttermilk *dont' skip this part, either!
4 tomatillos
cilantro
garlic
lime juice
jalepeno/ cayenne pepper- if you like it hot!
Mix all ingredients in a blender and serve cold over the top.

The best tortillas I've heard are from Trader Joe's. Sprinkle cheese on top and broil for a few minutes, then serve all ingredients over top. You can get the crunchies that go on top too to make it real legit. Enjoy-it's hard not to!
And just for fun--here's me at 24 1/2 weeks prego. I am continually amazed with the human body. Between helping cure cancer at work and watching my belly grow and grow- I am in awe at what our bodies are capable of! I really don't know how my belly can get any bigger, but I know it has to! These boys are about 2 pounds each now! I can hardly stand it- I can't wait to meet them!

Oh what a cute belly! Glad you're doing so well.
And what a Valentine's, I still remember the first time I went there was with you :) Although I currently prefer Coasta Vida now and their chicken salad..... either way, it is awesome!
